Instructions
Step 1
Slice 2 fresh garlic cloves and cook in pan with little olive oil
Step 2
Grate a large heirloom tomato into a bowl , all the pulp seeds etc
Step 3
Add 2 eggs to bowl with salt and pepper . Whisk until combined
Step 4
Add egg and tomatoe mix to pan , cook on medium low heat until eggs are tender and cooked through
Step 5
Toast your favorite bread or English muffin , top with egg mixture and feta .
