3 poundsboneless beef chuck roast

cut into 1$1/2-inch pieces
3 tablespoonstomato paste
1 tablespoonminced garlic
1 tablespoonchipotle chili powder
1 tablespoonpaprika
1 tablespoonground cumin
1 teaspoondried oregano
¼ cupwater
1 x 14 ouncescan diced tomatoes
Instructions
Step 1
Pat beef dry with paper towels; season with 1/2 teaspoon salt and 1/4 teaspoon black pepper
Step 2
Press Sauté: heat 2 tablespoons oil in Instant Pot
Step 3
Add beef in two batches: cook about 5 minutes or until browned.
Step 4
Remove to plate.
Step 5
Heat remaining 1 tablespoon oil in pot.
Step 6
Add onion; cook and stir 3 minutes or until softened.
Step 7
Add bell peppers: cook and stir 2 minutes.
Step 8
Add tomato paste, garlic, chili powder, paprika, cumin, oregano, remaining 1 1/2 teaspoons salt and 1/2 teaspoon black pepper, cook and stir 1 minute.
Step 9
Stir in water, scraping up browned bits from bottom of pot.
Step 10
Return beef to pot with tomatoes: mix well.
Step 11
Secure lid and move pressure release valve to Sealing position.
Step 12
Press Manual; cook at high pressure 30 minutes.
Step 13
When cooking is complete, use natural release for 10 minutes, then release remaining pressure.
