Swap the pork in this recipe for chicken, beef or lamb, if you prefer. For a veggie option, try
chickpeas. For extra flavour, add some spices to your pita bread. The meat can be marinated and frozen raw, then defrosted and thrown on the pan.

Step 1
1. In a small bowl, combine pork, oregano, garlic, lemon juice, salt and pepper.

2. Heat a large frypan over medium-high heat and spray with olive oil. Add seasoned pork and cook for about 5 minutes until lightly golden and cooked through.

3. Spray pita bread with olive oil. Heat another frypan over medium-high heat and add pita to the pan. Fry for 1 to 2 minutes on each side or until lightly golden
Step 4
4. Build your yiros. Place the pita on a sheet of foil or greaseproof paper and spoon on tzatziki. Add pork, tomato, onion and lettuce and roll up, folding the foil around the yiros to keep the filling inside the pita.
