Instructions
Step 1
Steam or boil cauliflower in separate pot till soft. Save water. Mash or blend cauliflower till smooth. Add 2 cups of water from boiled cauliflower and the mashed cauliflower to the crockpot.
Step 2
Sauté the onion, carrots, celery until beginning to soften (about 4 minutes).
Step 3
Add the ham and potatoes, cook for 2 minutes, then add the garlic and sauté until fragrant (about 30 seconds). Put everything in the crockpot.
Step 4
Cook in crockpot on low for 3-4 hours, or until potatoes and carrots are soft
Step 5
When ready to serve, add the milk and stir over the heat If a thicker soup is desired, take 1 cup of broth from soup and whisk in up to 1/3 cup flour (the more flour, the thicker the soup will be). Add this broth/flour mixture to soup. Let simmer until thickened (about 5 minutes).
