1 poundlean ground lamb
1 cuponion
1 x 16 ouncefrozen mixed vegetables
1 x 14.5 ouncecan lower-sodium beef broth
1 x 14.5 ounceno-salt-added diced tomatoes with basil garlic and oregano
1 x 10.75 ouncereduced-fat and reduced-sodium condensed tomato soup
1 cupdry brown lentils
¼ teaspooncrushed red pepper
2 ⅔ cupsmashed potatoes
Instructions
Step 1
In a large skillet cook ground beef and onion until meat is browned and onion is tender; drain off fat.
Step 2
In a 3 1/2- or 4-quart slow cooker combine meat mixture, frozen vegetables, broth, tomatoes, tomato soup, lentils, and crushed red pepper
Step 3
Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.
Step 4
Serve meat and lentil mixture 3 over potatoes.
