Milk seperating

For a recipe it asked for whole milk and cream but I didn't have it so I used water and half and half milk. I was making tomato soup and when I added that it's separated. What did I do wrong?

It will separate if you use low fat milk. By diluting the half and half, you decreased the fat content. Use heavy cream or half and half for best results..
