I'm curious if you'd be able to cook meat in this? Or would it be better to prepare meat and cool separately? Or maybe cook meat in this sauce after the 2 hours?
I think cooking the meat first and then adding the sauce is what is recommended

I don't think cooking meat in this from raw would work well, as the spices would totally overwhelm the flavor of the meat. But simmering meat in the sauce for 10 minutes or so at the end might work well. But that would also depend on what meat you are using.
