It’s Fiber Friday!

How will you up your fiber this day? Any good recipe finds? I’m going for a chia peanut butter pudding that I’ve prepped and roasted chickpeas with my lunch. And naturally not forgetting my fiber rich veggies.

After baking them for about 15-20 minutes with salt and pepper, I blended it all and made a soup with a bit of heavy cream. On the side, I baked an Acorn Squash with brown sugar and butter. Boy, was it jamming.
