I know it's not pumpkin season, but I've got a giant pumpkin from my gf's parents yesterday, and I would appreciate any suggestions/ideas on how to prepare it? :)

You could easily substitute the butternut squash for pumpkin in this recipe
thanks guys, it will be roasting then :) I'll see how it turns out and then decide whether to make a soup out of it, or use it for this nice looking gnocchi recipe

It would also depend on the variety of the pumpkin. If it’s more akin to one that would be used for carving during Halloween those have a consistency similar to spaghetti squash. It would be best then to bake it after cutting it into halves cut side down and then use a fork to shred it. Then substitute pasta with your pumpkin in your favorite dish.

I would roast it. put it in the oven on a high temperature until the skin has (almost) blackened. you can then use the flesh as a base for a pasta sauce or a soup. I often roast some bell peppers, tomatoes and maybe a chili, and purree the lot together as a pasta sauce. add water until you have reached your desired thickness, and top with some chopped almonds as garnish
