Oh this is a great one! “Fancy” ramen is one of my weekday meal hacks. I like to add a soft boiled egg (I make a bath of them earlier - 6 min 50 seconds in boiling water, then in an ice bath for 15-20 min), spinach or kale or broccoli I’ll add when the noodles are boiling, and sesame seeds on top! If I have nori or Wakame seaweed I’ll add that too.

The other option is to skip the broth entirely and do something like a cold noodle dish with the ramen noodles
We tend to drain the noodles and do a quick stirfry in a scrambled egg, some veggies (peapods, carrots) and "dragon sauce" from BudgetBytes.com = 1 part soy sauce, 1 part sriracha, and 1 part brown sugar (about a tbsp. each per ramen packet).
