Hi Rachael, I also tend to avoid spicy food, so in this case I can recommend using banana peppers instead of pepperoncini, since they are not so strong. Other option would be using cherry peppers, though they are a bit spicier compared to banana peppers

You could use Pablano Peppers, they are smoky but not spicy at all. You can also use the other peppers simply by seeding and removing the membranes, afterward rinse well.
