We loved lentils as kids, my mom would make a delicious lentil soup, I’ve tweaked her recipe, and my family loves it also.
Recipe: LENTIL SOUP
1 carrot, 2 stalks celery, 1 red onion, chopped, 1-2 garlic cloves, minced. Sauté in olive oil until done. Add 1-2 or more red wine and reduce to half.
Sort and rinse 1 bag of lentils and add to pot with reduction. Add 2 quarts of water, or good vegetable stock. Add 1-2 bay leaves.
Bring to a simmer, cook @5 minutes, reduce to a medium low simmer, and add @ 1 tsp of basil, tarragon, parsley, 1/2 tsp fennel, a pinch of fenugreek powder, crushed red pepper to taste, salt and pepper to taste. Adjust seasonings to your liking,
As it cooks you may have to adjust seasonings and add more liquid. Cover and cook until lentils are tender.
Serve with crusty bread, a dollop of Earth Balance Spread, and your favorite cheese or cheese substitute.
