What are some essential Japanese ingredients to have on hand?

For me, they are ponzu sauce and bonito flakes. I have shabu shabu, Japanese hot pot pretty often and I mix ponzu sauce with mustard for the dipping sauce, and make the broth with bonito flakes 😊. I'm attaching a shabu shabu recipe here, you should also try it!

Too many! I guess I'm never without soy sauce, bonito flakes, okonomoyaki sauce, dashi, Mirin, rice vinegar, sesame oil, nori. I make a lot of sushi/sushi poke bowls, okonomoyaki and teriyaki chicken. I want to have a go at kaarage chicken next.
