This is a mostly carbohydrate side dish, so the absence of much protein means that it's probably not going to have a high health score. But, like much of Chinese cuisine, it's heavy on sodium. I was able to increase the health score from 4.6 to 5.5 by simply specifying low sodium soy sauce and peanut butter. There is nothing else particularly negative about the ingredients, so if you serve this as a side in a meal with lean protein and lots of vegetables, you can have a very healthy meal. Remember that the health score is about balance, but some recipes are, by their nature, unbalanced alone. But as part of a whole meal it balances out.
