Wednesday's is usually a "what's the fastest thing I can make" kind of night - sometimes leftovers, sometimes frozen things, and some other under-15-min meals. This is a little bit of a cheating recipe, but I make batches of dumplings on a weekend and then freeze them. So for dinner I'll take them from the freezer, put them directly on a nonstick skillet with a little oil and a couple tablespoons of water, then cover and heat so they're crispy. I'll eat them with soy sauce (and chili crisp!). I'll usually also quickly steam some frozen broccoli or sautee some spinach to have something green with it.
