Jarred pimentos are soft and don't have significant spice. I think they are also partly there for color, so roasted red pepper, whether from a jar or you roasting red (orange/yellow) bell or other sweet peppers, might work fairly well. But there is already the green bell pepper contributing its texture. If you don't care about color and wanted a smidge of heat, I'd think you could also put in large mild chiles like poblanos, anaheims, wax peppers etc. roasted or just chopped and treated like the bell pepper as you wish
While I haven't made this, it sounds like substituting jalapeño or hotter would be quite different from the intent of the recipe—but if you'd like a far spicier result, I don't think it would be bad taste wise aside from the heat. By the way, pimentos are not pickled, so any kind of pickled peppers might not be ideal here.
