Healthy or not I love stuffed peppers :) You can use quinoa instead of rice to make it more healthy, but Health score 6.8 is good enough for me :)

I would say this is a pretty healthy recipe. If you want to make it healthier you can add quinoa as Buttercup suggested. You can also swap sausage with lean beef mince or chicken mince.
