What are your favorite "impressive" Vegetarian main dishes that everyone (not just vegetarians) loves?

I always get a surprised reaction when I make lentil sloppy joes because it tastes so much like the meat version. Also, I'm not sure if people are surprised that it's vegetarian, but the palak paneer recipe I use is always a crowd pleaser! There are never leftovers.
