I don't see why that would be a problem. I would also definitely use skinless instead of breaded since it more healthier. Let me know how it turned out ;)

I would definitely agree on swapping out breaded chicken. Personally I like crispy skin on roast chicken, but in this skinless may be better. Maybe with a bit of marinade?
