THE Recipe

What recipe made you a fan of the Instant Pot?

This recipe beautifully replicated delicious meals I could never forget from holidays to Morocco. Attempting to cook with the large ceramic apparatus in my kitchen felt inappropriate and unfortunately cooking on a fire outside is just not practical given my location. The instant pot has revolutionised this ancient cooking technique and I have been a huge fan since my first Turmeric Chicken and Green Olive Tajine. Delicious!

The first recipe I ever made using the actual pressure cooking functionality (I used slow cooker first to get used to it) was a pot roast. It was so good, it reminded me of how good my dad's cooking is. I moved out a few months ago so it was just a really nice taste of home.

I love that the IP can operate on a very low amount of liquid (my old one was very temperamental) and this one from The Spicy Apron had me hooked - https://thespicyapron.com/recipe/instant-pot-whole-chicken-easiest-thing-ever/ … another recipe I have recently found that ticks all the boxes of being simple, tasty, quick and everything is done in the one pot is https://www.everynookandcranny.net/instant-pot-sausage-mash/. We have made substitutions to the sticky onions by using onion jam and tomato chutney and they all turn out delicious!!

🤔 not really a recipe, but I use mine a lot to cook pasta, rice and reheat homemade meals right from the freezer. I love it as it frees up my time to do something else.

I make sushi and poke bowls quite often using this sushi rice recipe. So easy! (yes it is a lot of vinegar, but trust the process)

In response to Charlotte Fordham‘s review on the sushi rice - I would encourage you to try the pot-in-pot method of cooking the rice… works every time for me now - no sticking 😁 (https://www.pressurecookingtoday.com/how-to-use-the-pot-in-pot-method-in-your-pressure-cooker-instant-pot/)
