Any ideas?!

I recently figured out that I was lactose intolerant, we are mostly plant based but one week I added some recipes with cheese and my stomach was messed up after. I would like to make these zucchini boats and I'm not sure how it would taste without the cheese... do y'all have any ideas of what I could put on it instead of cheese? I don't like the vegan cheeses but if y'all have any ideas I would love to hear!!

I’m not a huge fan of vegan cheese BUT miyokos pepper jack vegan cheese is my jam and would be perfect for this (has a bit of spiciness). For other cheese alternatives - definitely nutritional yeast is great for adding cheesy type flavor. I would maybe try playing with that plus tahini or vegan Mayo? I really like hot sauce plus tahini or sriracha plus vegan Mayo as “sauces” - that might work here. Another food product I like is Chipotle flavored “Bitchin’ sauce” (I swear that’s the name!) if you’ve ever seen it. Goes great with beans, and could work nicely!

You could try using cashew cheese. We're not fond of that fake cheese taste as a family, but we all like the mild nuttiness of cashew cheese on our pizzas and on salads. Bear in mind that it doesn't melt, but does brown slightly!

hi chickencat, I've tried using nutritional yeast flakes once, and it was an interesting experience :) however, since you need a cup of cheese for this recipe, I'm not sure that it could work, though you can sprinkle it on top of zucchini boats just as an experiment :D I've also found this website that recommends some vegan cheeses, which you said you don't like, but maybe there is something here that you haven't tried before :) https://plentyvegan.com/10-good-vegan-cheese-substitutes/
