Normally I find myself with fried chicken leftovers, I get bored of plain fried chicken easily. Any recipe suggestions on how I can include these leftovers?

if it has no bones then I chop it up and put it in a tortilla wrap with some salad. could also slice, heat and add to burritos. if it has bones then just debone it and do the same thing

Debone, Chop it up, and mix it with Mayo.
Gives a fresh filling for a sandwich.

I usually cook up some rice in a chicken stock. Let it cool and chill in the fridge for a couple of hours. Next beat up a couple of eggs. Heat some oil in a wok or pan add the rice keep stirring and after three minutes add the eggs. Stir for another three minutes and add the left over chicken. Serve with some salad leaves and a sweet chilli sauce.

This is a great recipe for using leftover chicken. I normally serve it with rice and peas and sweet corn. In the recipe it says to do it in a crockpot but if you mix all of the sauce ingredients together and cook them of on a medium heat for 10 minutes then you can just mix in the leftover chicken.
