Which canned tuna do you usually buy? Which one is the healthiest?
Is it flaked or chunked, in water or in oil, albacore or yellowfin?

I'll buy albacore and flaked/chunk in water. I use the albacore in casserole or tuna mac. flaked/ chunk for tuna melt or tuna salad.....or cat food in a pinch....

Water and albacore; keeps the Omega's in the fish instead of being diluted in the oil (of course, unless you cook with the oil it comes in.

I go for the tuna in water (fewer calories) and I prefer chunked. No idea about albacore or yellowfin - whichever is cheaper I suppose.

I've read that albacore has more mercury in it rather than chunk. Is that true?

I've read that info too. Yellowfin, supposedly, also has higher levels of mercury
