For a slightly lighter cheesecake, use half the sugar and replace 1 to 1.5 packages of the cream cheese with Neufchâtel cheese. I also substituted shortbread cookie crumbs for the graham cracker crumbs. A lot of the butter leaked out of the crust, so I don't know if I should have used less butter or what! In the future I think I'd reduce the amount of lemon zest, it was a little strong for my tastes. I cooked it for an extra 10 minutes because there was still a lot of "jiggle", but that may have actually over-cooked it!
