I used cubanelle peppers cause it's what I had and it was pretty good. I also added some sweet corn, spicy picante sauce, and pepperjack and xtra sharp cheddar cheese. It would have been better with a dollop of sour cream but I was out. I feel like you can customize this recipe to your preferences and make it your own.
