I didn't use the pineapple salsa on top (too much extra work with 2 newborns in the house) but this dish was amazing. A little bit loose, it didn't really keep it's loaf shape but the flavour was out of this world. I also took the authors advice and made the funeral potatoes they have a recipe for and the combo was phenomenal.
