Spectacular side dish. I made this with the author's chorizo meatloaf and it was a great combo. It probably would have made leftovers but everyone went back for seconds and thirds even my 6 year old. I love elote so this dish really did it for me. Creamy, sweet, hit of acidity with the lime in it and a little on top, a great crunch with the browned cereal. I would make this any day of the week.
