I think I needed to air fry the zucchini a bit longer. I also think I needed to be a little more liberal in my use of spices. Also, I'm betting fresh garlic would have popped more than the minced garlic I use.
All of that said, it was good, not great, but the bones of a great dish are there. I will definitely give this another shot with a few tweaks. This time, luckily I cooked some shrimp in the pan in which I threw the pasta and zucchini together. I was able to get some of the taste cooked into the shrimp. That really saved the dish this time. I think I will probably always do that, or maybe some chicken.
