Ah don’t worry - really only about 6 stretch and folds needed for each set. It sounds like your bread flour (I’m assuming you used bread flour, not plain?) just doesn’t absorb as much water as mine. It’s okay for it to be wetter and looser than mine. It should still bake up just fine! If it’s plain or all purpose flour you used then I’d reduce the water next time, maybe even slightly reduce it if it’s bread flour too. It sounds like it might not absorb as much as id expect bread flour to absorb!
