This is my go-to focaccia recipe, just from my own trial and error, we ended up w/ the same ratios. So good every time. Can spend a day or two (or three, whoops) in the fridge and still turn out fantastic. I always add fresh cracked pepper to mine, it plays so well with the floral notes from the honey.

Great bread minds think alike! I love how forgiving the dough is with timelines too - have you tried same day? I start first thing in AM and have focaccia by dinner!
