I made this on a night when I didn't feel like cooking. time wise, it didn't save me anything, and I forgot to get a side. but! the look on my husband's face when he ate this made it all worth it. the au jus is perfect. I used provolone cheese and yellow mustard to serve, and it will definitely be a repeat. next time, I'll make sure to cut the chuck thinner; the thickest part of the roast wasn't quite fork-tender.
