I despise instant pots, they seem to take forever, and are almost never truly one dish meals, but my wife wants to try it once in awhile. I just feel like I could make it so much faster in a large pot on the stove, or let it simmer all day in a crockpot. Good thing is, this recipe can do either!
I enjoyed it, but my wife and the kiddo did not. They both complained about the vinegar, so next time I will either cut it in half or just omit it all together. I did add Worcestershire sauce in the leftovers and that seemed to help a lot.
I just used a whole head of celery, ended up being more then the recipe called for, also increased the carrots and the potatoes. Cut the potatoes smaller than just in half. I cooked the stew meat on a skillet instead of in the instant pot, never had luck with the sear function. I also omitted the pepper and just had some at the table.
