A little time-consuming, but totally worth it. I made the following adjustments.
- used lemon juice instead of lime, because that's what I had.
- skipped the bell pepper
- used Better than Bullion
- added about 1/2 cup of salsa
- served with a dollop of sour cream
It got a teensy bit burnt on the bottom when the rice was cooking, but not enough to affect the flavor.
