I had some mini gold and red potatoes leftover that needed to be used, and I had a sweet onion because that's what I could find in my store that looked decent. I just chopped up some of my spiral sliced ham into bite sized pieces and then followed the recipe except I added a tiny bit of fresh thyme and rosemary to my roux... Incredible and oh so creamy, with the texture of the mini gold and red potatoes... I covered the top in panko crumbs but didn't add any butter to them because I didn't have time. They didn't need it! This recipe is a total win!! Downsides... you are 3 pans deep to make it...and it can't be that healthy for you... but man it's tasty ๐๐
