I didn't have the stove high enough to get the sear I wanted on the veg and tofu, plus I chucked in some leftover canned tomatoes on a whim. This made a very moist dish--almost a chili. Would omit the canned tomatoes next time. I put it on toast to break up the soft-on-soft texture and added some diced red onion for the same reason. Has potential but I need to keep tweaking.
