I adapted this quite a bit. I'd make one-sheet fajitas the night before and had leftover chicken, bell pepper, and onion.
So I threw some garlic seasoned quinoa in a skillet, a can of black beans, a bunch of halved cherry tomatoes, and then the leftovers and heated it together. Tastes incredible just like that, makes a great lunch. But I also used the mixture to stuff my "taco stuffed sweet potatoes" and sliced an avocado for the top, add some salt, it's incredible too. This is a great multi-purpose leftover!!
