I feel like I hit a gold mine with this recipe-amazing!!! Thank you ❤️ I like to sub in 50 g of white whole wheat flour for bread flour (for a little more flavor). I add in 10 more grams of water. I like to let rest 15 min, then fold. Then 1 hour, fold, into the refrigerator overnight and bake the next day. It's kind of a combo of the overnight and same day version. I've made this recipe over 20 times now and that's just what I've settled on 😊
