Maybe I shouldn't mark this as made....I used it more as inspiration.
I ended up using beef chuck for this, 4oz per serving. I was going to use shrimp but I missed a sale and ended up using what was cheaper. My husband hates canned corn, so I added half an ear of corn that I baked in the oven with a little butter. Instead of canned black beans I used some pinto beans I had in my freezer. I also used way more rice than the recipe calls for. Overall though, my husband loved it.
