Ok, so I didn’t have high hopes for this. We are not big sweet potato people but I was looking for something spicy, healthy, and most of all, easy to make and store for the week. This was a home run. It’s spicy, tender, and the sweet potatoes compliment it so well. I love broccoli so in my opinion it could be added to any dish, so of course it was also a hit for me. I may leave the broccoli to cook around 20-25 minutes next time for a little softer texture for my husband. But overall I will be adding this to the meal pre rotation. And I will look forward to how easy and delicious it is. Thank you for this! (I’d post a picture but my bowl is empty)
