Nice keto hack! I go through keto phases, so I'm always interested in knowing how pork rinds do in place of bread crumbs. Nice to know it still works. To be fair, you would also have to leave out the ketchup and sugar, but there's a lot of flavor in there, so you wouldn't miss them. I used mushroom seasoning in place of salt and halved the sodium content with no sacrifice in flavor. If you're doing a higher protein diet and reducing carbs, it's sometimes helpful to reduce sodium intake as well, since it puts a lot of stress on the kidneys.
