This recipe is good but could definitely use some tweaking with the proportions.
You need just 1/2 a potato otherwise it overpowers the spinach, which should be the main feature. I’d also cut it into quarter circles instead of squares.
Also, I think you only need 1/2 a white onion…while the onion and tomato cook down, even a whole onion that’s just medium sized is too much for just a lb of spinach. I might even try blending or at least processing the tomato and onion together next time instead of simply dicing it by hand as it’s again, not the main event of this dish.
I’d consider trying to make this with dried red chilis and mustard seeds next time. I didn’t use green chilis here because we didn’t have them, but I did use cumin seeds and not sure if they added much to the dish.
Don’t skimp on the salt and make sure to cook the spinach thoroughly, even if you’ve already partly cooked it by defrosting in the microwave, as that raw taste really needs to get out :)
