It wasn’t tasty and the cinnamon just felt out of place in the dish. It was also pretty time consuming, which is frustrating that the flavors weren’t really there.

I wouldn’t use the eggplant. It turned out mushy and lacked flavor. I would just use the couscous/chickpea filling as the main dish and add different spices/exclude the cinnamon
