This was super delicious! 😋 I'm not a massive fan of raw onion, so cooked the onion with a teaspoon of smoked paprika, salt and pepper for the last 5 minutes in a separate pan to the salmon. Used a griddle pan for the salmon.
Really easy, quick, fresh, and yummy!
Makes 2 meals and I'll use the leftover avocado salsa on toast for breakfast!
