Substuted miso paste for beef stock cubes, and added more root vegetables and some mushrooms because I had them on hand.
Unfortunately, I had to leave to be somewhere before it finished cooking, so no pictures, but my husband said our toddler ate heaps (after not eating more than three bites of anything that wasn't toast for a week straight). He even wanted to steal more off me when I got home to have some.
Total win in my books! Will definitely be cooking again!
