Safety PSA: Rinsing rice isn’t optional, folks!! This is akin to eating produce straight off the shelf without washing it, and potentially worse depending on how the rice was grown. If you’re wary, use a fine mesh colander over a large bowl. Soaking rice is also immensely helpful—helps to make it digestible for our gut. Use the “finger method” and you’ll have perfect rice every time. After rinsing several times, add water until, with the tip of your finger atop the rice, the water comes to your first knuckle/finger bend. It’s how folks in India and other eastern Asian countries do it—tried and true method.

Internet doesn’t agree… says no risk not washing. I’ve tried this recipe several times, it’s brilliant!

One result comes up no for me… Many others, with science backing them, speak of contaminants like water soluble arsenic, lead and cadmium which are present during the growing in rice fields. Just like any other plant, rice is not grown the same across the board. Take risks if you’d like, but the Internet gives more than one answer and there is a plethora of info that gives the “yes and here’s why” contrary to the “no”. Parboiled rice is another story.
