I love all things roasted veggies! I do not like mushrooms, though, so I omitted those. I lost some protein taking them out, but next time, I think I'll roast some chickpeas in its place. Brussel Sprouts would be wonderful in this as well, but any veggies would do. It would be great to use up those who are about to go bad. I also love the dressing, though I substituted the agave nectar with maple syrup. Not to mention the minimal clean-up! This recipe is a keeper!
