Fantastic Enchilada (with some small changes!) Use corn tortillas instead of flour, add half an onion into the ground beef, season ground beef with Italian seasoning, garlic powder, chili, and red pepper flakes, and use pepper jack cheese instead of cheddar! Also, add salt salt and more salt!Also cooked for 18 minutes instead of 20. Was INCREDIBLE! Made some quick refried beans as a side and it went really well with the spicy enchilada.
