I ended up turning this dish into a soup. I added Trader Joe's lentils. I also added 1 small packet of truvia for a tiny amount of sweetness. I put 1 can of coconut cream and one small container of chicken broth. I also drained the tomatoes. I think it needs a small amount of stronger spice to give it a little kick. My husband liked it and had 2nds. I also added green onions for a garnish.
