Use around 2 metric cups of sticky rice. Steam in 2 batches so the rice steams evenly. Use the bamboo steamer pan. Wet the cloth and place on bottom of bamboo basket. Place sticky rice (once mixed with olive oil, white pepper & salt) onto basket then into large steamer.
Steam rice for 20 mins then add mushroom/sausage mix on top. Steam for another 10 minutes.
Turn onto fry pan and season with dark soy. If too fry add little bit of water or stock. Keep turning until all rice coloured evenly.
