Such a delicious treat to make when you don't want to use the oven and don't want to make a huge crummy mess of the kitchen! It isn't overly sweet (i.e. very moreish) and doesn't use gelatin which is great for veggies. The flavours are really elegant and subtle.
I recommend paying attention to the amount of lemon juice used in the recipe. Don't think you can get away with more as I did, as it will curdle the mixture. Certainly doesn't affect the taste, but I could tell when set that it was just a teeny bit grainy in texture. Don't make my mistake! Also, don't overwhip the cream, as tempting as it is. It will set once the white choc cools.
